Lors de l'nstallation de ta debian, décoche la case "Interface graphique", et tu n'auras pas l'interface.
Sinon, après install, tu peux toujours supprimer Gnome (l'interface graphique) en faisant

apt-get remove gnome xorg*
Sans désinstaller gnome, tu peux toujours accéder aux terminaux via CTRL+ALT+F1 pour le premier terminal, et CTRL+ALT+F6 pour le 6eme terminal, CTRL+ALT+F7 pour retourner sur le premier affichage graphique.
Sinon, installe openssh-server pour accéder à ta machine via une console distante (PuTTY sous Windows, openssh-client pour tout unix).
